Veggie Stew

This stew is my all time favorite.  The combination of  beans and potatoes lend such a wonderful creamy texture. Plus, the addition of fresh veggies don’t make you feel so bad about having two starches in the same soup!

 

I’m a frugal person.  A strong believer that brand name foods are not always better than the “off brand”.  One thing that I never buy ‘off-brand’ is my tomato sauce.  Hunts is the ultimate when buying store bought.  It’s thick and bursting with flavor.  So pay the extra 50 cents more. 

This stew makes me long to own a soup café.  One day I dream of nothing more than owning a cozy little café, dishing out delicious soups, stews and of course crusty breads!  There’s nothing I love more than standing over a warm stove, stirring up a pot of deliciousness.  Yes, I’m one of those crazy people that in the dead heat of summer you can find me latched onto my wooden spoon, stirring a steaming pot of soup.

 

If you make this delicious, thick stew I ask only one thing of you, make sure you save some for the next day.  It is absolutely mind blowing after the ingredients have married for a day or two.

Veggie Stew

 

{ingredients}

 

1 small onion, chopped

3 small to medium potatoes, chopped

2 carrots, chopped

2 ribs celery, chopped

1 (14 oz) can tomato sauce {I prefer Hunts}

1 (14oz) can corn {fresh if you have that on hand}

1 (14 oz) can green beans {fresh if you have that on hand}

1 C beans, cooked

1 tsp cumin

½ tsp pepper, more or less to taste

½ tsp salt, more or less to taste

Pinch chili powder

3-4 C veggie broth, or water

{directions}

Saute onion in one tablespoon of EVOO, until translucent

Add carrots, celery and potatoes.  Season with salt, pepper and cook for 4-5 min.

Add tomato sauce and broth. 

Add corn, green beans.  Add remaining seasonings.

Bring to a boil.

Reduce heat and simmer for one hour or longer.

Add beans and simmer for 20-30 min longer.

Serve.

 

As you can tell from our skies, it’s brutally cold here.  I dont’ function well when the temps drop below 40*.   I will see you all soon with a unique twist on the pumpkin roll.
