Veggie Couscous

Do you crave healthy wholesome dinners?  Are you a busy mama?  I have the most perfect recipe for you!  This recipe has been one of my favorite things to throw together for dinner, for years now.  If you do your prep work in cleaning and cutting your veggies on the weekend this dinner can be thrown together in 10 minutes.  No jokes.

After a long day I want something warm, filling and flavorful.  But I don’t want to spend all night in the kitchen.  That’s why I adore this recipe.

Who wants to spend all their time in the kitchen after a long day in the office?  I hope you enjoy this quick and easy recipe.

Veggie Couscous

{ingredients}

2 carrots, diced

1 zucchini, diced

1 clove garlic, mined

2 ribs celery, diced

½ C Couscous

1 C water

4 T soy sauce

2 T honey

1 T lemon

2 T Evoo

¼ tsp pepper

½ tsp salt

1 pinch red pepper flakes

{directions}

In a small pot bring water to a boil.  Add a healthy pinch of salt and couscous.

Remove from heat and cover for 5-10 min.  Fluff with a fork.

In a medium sauté pan heat EVOO over med-high.

Add garlic for 1-2min

Add in veggies.

Toss for 3-5 minutes until just tender.

Add in soy sauce, honey, lemon, salt, pepper and red pepper
flakes.
