With the plethora of tomatoes I received from friends gardens. I decided to try my luck at homemade tomato sauce. I was quite surprised how well it turned out. I was extremely doubtful as I was adding the ingredients to the pot. It all came together beautifully and filled the house with a wonderful Italian aroma.
Tomato Sauce:
5 vine ripened tomatoes, peeled, cored, chopped
2 cloves garlic
1 yellow onion
5 basil leaves
Salt + Pepper to taste
A couple pinches of red pepper flakes (depending on your taste)
1 T butter
2 T EVOO
Heat EVOO in large pan. Add onion and garlic, cook until translucent. Add Tomatoes, basil, butter and seasonings. Simmer for 1 hour on low-med. Carefully place tomato sauce in blender. *Be careful* Blend well. If not using promptly allow to cool completely before placing the fridge.

So, you didn’t put the seeds in? I agree. This looks so simple and it has an inviting color that makes it look less “heavy” than other tomato sauces. I’ll have to try this one out!

Thats right I took all the seed out. It was a bit juicy and messy but nothing too terrible.

After having Spaghetti Pomodoro @ Scarpetta’s in Miami I have been trying to find a recipe for a good Tomatoe Sauce that is as fantastic….However after many tries I’ve had no luck so I’m excited to try this recipe….it looks really smooth and not a heavy tomatoe look to it…..I have added cream to my sauces too and that makes them a lovely orange vs. red…..
