The Best Mocha Cupcakes of Your Life

Sometimes a cupcake recipe comes along that makes you wonder how you ever got by in life without it.  This vegan cupcake cake recipe is a keeper.  I have made it several SEVERAL times.  I’m not quite sure what I would do without it.

I made these cupcakes for Jonathan’s birthday.  The cupcake was vegan and the frosting was real genuine buttah! Just because there is nothing like a good buttercream frosting.  The frosting really stole the show.  I must say it was rich and creamy in a way you could never imagine.  The coffee brings out the wonderful cocoa flavor.

Make these for the person you love most in your life.  Make them for yourself, your child, your spouse or parent.  Whoever it maybe they will be the most memorable cupcakes of their life.

The Best Mocha Cupcakes of Your Life

{ingredients}

1 cup almond milk

1 teaspoon apple cider vinegar

3/4 cup sugar

1/3 cup canola oil

1.5 tsp vanilla

1 cup all-purpose flour

1/3 cup cocoa powder, Dutch-processed or regular

3/4 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

Mocha Frosting

{ingredients}

2 Sticks butter

3 C powder sugar

3 T coffee, brewed

3 T cocoa powder

1 tsp vanilla

1 pinch of salt

{directions}

Preheat oven to 350°F and line a muffin pan with cupcake liners.

Whisk together the almond milk and vinegar in a large bowl, and set aside for a few. Add the sugar, oil, vanilla extract, and other extract, if using, to the almond milk mixture and beat until foamy. In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Add in two batches to wet ingredients and beat until no large lumps remain (a few tiny lumps are OK).

Pour into liners, filling 3/4 of the way. Bake 18 to 20 minutes, until a toothpick inserted into the center comes out clean. Transfer to a cooling rack and let cool completely.

{Frosting Directions}While cupcakes are cooling bea together butter for 3-5 minutes. Reduce speed and slowly add in the powder sugar.  When sugar is mixed in add in coffee, cocoa powder, vanilla and pinch of salt. Add more powder sugar to obtain desired consistency.
