I’ve been on a major salad kick lately!  But the thought of eating a classic house salad with the same old boring toppings makes me cringe.  I’m such a creature of habit but when it comes to salads I need variety.

This salad is anything but classic.  The ingredients are simple everyday items.  But the flavor is amazing.  I wanted to create a Thai dressing but I didn’t have most of the ingredients classic Thai dressings have.  So i went out on a limb and made a dressing with the ingredients I had in my fridge and pantry.  This dressing is my favorite.  It’s light yet holds its own when it comes to flavor.  I loved adding the fresh cilantro.  It provides a clean flavor.  While the red pepper and tamari add a zippy-ness.

Thai Inspired Chopped Salad

Ingredients

  • 2 cups Romaine, chopped
  • 2 carrots, julienned
  • 1/2 red pepper, julienned
  • 1/2 small head purple cabbage, julienned
  • 1/3 cup sliced almonds

Dressing

  • 1/4 cup red wine vinegar
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon tamari
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 1 teaspoon chives
  • 3 tablespoons cilantro, chopped

Instructions

  1. Whisk together dressing ingredients and set aside.
  2. Place all chopped veggies and almonds in a large bowl.
  3. Dress salad right before serving. If making ahead store dressing and salad separately.
