Tex-Mex Shrimp Lettuce Cups

Bring on the tropical summer flavors!  This week brought snowy days, winter snow gear, cozy bowls of chili, and warm cups of tea and hot chocolate.  I love all of these things in December.  I’m not ready for all things spring and summer.

These tex-mex shrimp lettuce cups are such a breath of fresh air.  The flavor combo is such a wonderful pop for your palate.  I love the combo of the creamy avocado and bright pineapple.  Both flavors pair well with the spice seasoned shrimp.

This recipe calls for a few more steps than I usually like but all can be prepared in advance and you can assemble the cups as you need.  This makes the perfect light dinner, snack or lunch.

Tex-Mex Shrimp Lettuce Cups

  • Yield: 4 lettuce cups

Ingredients

Avo Dressing

  • 1/2 avocado
  • 3 tablespoons red wine vinegar
  • 2 teaspoons honey
  • 1/4 cup fresh cilantro, chopped
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup water

Shrimp

  • 1/2 pound shrimp, peeled deveined
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1 pinch salt and pepper
  • 1 tablespoon olive oil

Cups

  • 1/2 avocado
  • 1/2 cup pineapple
  • 2 tablespoons fresh cilantro
  • 2 tablespoons minced red onion
  • 1 tablespoon lime juice
  • 1/2 cup black beans
  • 4 butter lettuce leaves

Instructions

  1. In a food processor combine avo dressing ingredients and puree until smooth. Set aside.
  2. In a small bowl combine 1/2 avocado, pineapple, black beans, lime juice, cilantro, and red onion. Toss and set aside.
  3. In a small saute pan heat up olive oil over med-high heat.
  4. Add in shrimp and saute until opaque and slightly browned.
  5. Season with chili and garlic powder and salt and pepper. Let cool slightly.
  6. To assemble the cups divide the shrimp up between four lettuce leaves, top with avocado pineapple mixture, drizzle the avo dressing and top with additional cilantro if desired.
