Sweet Potato Soup with Corn and Tomatoes

I crave simple recipes with nourishing ingredients.  This soup only has a few simple ingredients but comes to life with a few spices. This may not be the most photogenic recipe but it is definitely a star in taste.

It only gets better with time.  I love recipes that are twice as delicious the next day.  This soup is perfect to make ahead for lunches all week as well.  So easy and convenient.

The sweet corn and tomatoes add a refreshing taste and give the soup a little bit of texture.  Croutons or crusty bread to dip would be a nice choice for topping as well.

Sweet Potato Soup with Corn and Tomatoes

  • 1 teaspoon olive oil
  • 1/2 cup corn
  • 2 small tomatoes, chopped
  • 1 tablespoon chives
  • 1 pinch salt, pepper, red pepper flakes
  • 2 sweet potatoes, peeled and chopped small
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon chili powder
  • 1 pinch red pepper flakes


  1. In a small saute pan heat olive oil
  2. add in corn, salt,, pepper, red pepper flakes. Once slightly browned add in tomatoes and chives. Remove from heat.
  3. In a medium sauce pan add potatoes and broth.
  4. bring to a boil and let simmer until potatoes are very tender.
  5. Add seasonings and puree with a hand held blender.
  6. Add more broth if needed.
  7. Adjust seasonings to your taste.
  8. Pour into bowls and top with corn mixture.
