Summer Quinoa Salad

I’ve been addicted to this simple summer quinoa salad.  It is as simple as it gets.

Although, there are few ingredients in this recipe the quality is what really matters here.  You want the freshest tomatoes and cucumbers you can get your hands on and the highest quality olive oil.  I really prefer heirloom tomatoes.  Have you ever tried them?  They are much more expensive but there is nothing like a fresh heirloom tomato.  Truly a summer must!

If you don’t have a Trader Joe’s near by you can use any champagne vinegar you like.

I adore this salad on its own but you can also serve it over a bed of leaf green lettuce or top it with grilled salmon or chicken.  It is perfect left over for lunch the next day, as well!

Summer Quinoa Salad

  • Serves: 4

Ingredients

  • 1 1/2 cups quinoa cooked
  • 1/2 cup cucumbers, chopped
  • 1 heirloom tomato, chopped
  • 1 tablespoon chives, chopped
  • 1/4 cup olive oil
  • 1 teaspoon sugar
  • 2 tablespoons Trader Joes Orange Champagne Vinegar
  • salt + pepper, to taste

Instructions

  1. In medium bowl whisk together sugar, olive oil, vinegar, chives, salt and pepper.
  2. Add in cucumbers, tomatoes and quinoa
  3. Toss until quinoa is even coated with dressing mixture.
  4. Serve at room temperature or chilled.
