Spinach Cornbread Layered Salad

Hey! How’s your week going thus far?  I hope you all had a lovely V-day.   Nothing beats a day full of love.
 
 
Every time I attend a potluck this is my go-to dish.  Everyone goes mad for this salad.  This salad was made for busy moms everywhere.  You throw this together the night before and you are ready to go.  You can feel free to add the dressing into the layers.  I would only suggest this, though if you are planning to serve it right away.  Nobody likes soggy salad.  
 
 
This salad can easily be made vegetarian by omitting the bacon.  But I don’t suggest it.  The bacon adds so much flavor.  It blends beautifully with the cornbread and fresh veggies. 
 
 
Spinach Conbread Layered Salad
 
{ingredients}
2 C spinach
6 slices bacon, cooked and crumbled
1 Can black beans, drained and rinsed
1 Can fiesta corn
1 box cornbread, prepared according to directions
1 C shredded colby-jack cheese
1 C diced tomatoes
1 bunch green onions, chopped
1 C Ranch dressing
 
{directions}
In large salad bowl layer half spinach, crumbled cornbread, bacon, black beans, corn, tomatoes, onions and cheese.
Repeat the layers once more.
Serve with ranch dressing
