Southwestern Sweet Potato Rounds

Southwestern Sweet Potato Rounds are the perfect appetizer to get your party going.  So much goodness in one bite – okay maybe two.  But you won’t be mad about it.  these are such a delicious appetizer.

Aside from cutting and baking the sweet potatoes the rest of the recipe comes together in minutes.  You can make homemade guac or pick up your favorite brand at the store to simplify this recipe even more.

Southwestern Sweet Potato Rounds

  • Cook Time: 20m
  • Total Time: 25m
  • Yield: 14 rounds


  • 2 sweet potatoes, sliced 1/2 inch thick
  • 2 teaspoons olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon chili powder
  • 1/2 cup guacamole, homemade or store bought
  • 1 teaspoon olive oil
  • 1 clove garlic, minced
  • 1/2 cup seasoned black beans
  • 1/4 cup roasted corn, I used Trader Joes
  • 1/2 cup mozerrella cheese, shredded
  • 1/4 cup cilantro or chives, chopped.


  1. Preheat oven to 425*.
  2. On a sheet pan toss sweet potatoes, olive oil, salt, pepper and chili powder
  3. Spread evenly in single layer. Bake 10 minutes and flip for another 10 minutes.
  4. In a small non-stick pan heat 1 teaspoon olive oil and saute garlic until tender. Add in corn and black beans until heated through.
  5. Remove from heat to cool.
  6. Once sweet potatoes are cooked remove from oven and place on cooling rack or plate.
  7. Top each round with guacamole, corn mixture and mozzarella cheese.
  8. Garnish with chives or cilantro, if desired. Serve at room temperature.
