I’m so excited to be apart of this months Daily Buzz Moms 9X9. I created this amazing, colorful salad in honor of their Somewhere Over The Rainbow theme. When I saw all these vibrant veggies spread out together I wanted to melt away to the summer months. This salad is sure to brighten any dreary winter day.
I want to tell you a little bit about the dressing. It’s light. It’s flavorful. It will blow your mind. Seriously. I wanted to bath in this stuff. The refreshing combo of honey, lemon and cilantro is beyond tantalzing. Eating your veggies has never been so delightful.
After this pasta salad has chilled out in the fridge for awhile, the flavors harmonize and the dressing softens the vegetables. The results are wonderful. I hope you enjoy this salad as much as I did.
Somewhere Over The Rainbow Salad {DailyBuzz Moms 9X9}
{ingredients}
1/2 lb dry pasta
1/2 yellow pepper, choped
1/2 orange pepper, chopped
1/3 small purple cabbage, shredded
1 tomato, chopped
1 clove garlic, mince
1/4 C cilantro, chopped (garnish)
1/4 tsp red pepper flakes
1 tsp salt
liberal dash of pepper
{Honey Cilantro Dressing igredients}
1/3 C Olive oil
Juice of 1 lemon
2 T honey
1/4 cilantro, finely chopped
season with salt and pepper
{directions}
Cook pasta according to package directions. Do not over cook. Drain and rinse with cold water. Set aside
In a medium bowl whisk together olive oil, lemon juice and honey until emulsified.
Add in Cilantro and whisk until well combine.
In a large bowl combine pasta, peppers, cabbage tomato, garlic.
Season with red pepper flakes, salt and pepper,
Pour dressing over the pasta salad and adjust seasonings to your taste.
Place in refridgerator for 2 hours or more.
Taste test once more and adjust salt and pepper, if needed.
Garnish with fresh cilantro
Yesterday, we were riding our bikes in light jackets. Today, we are shoveling snow in 20* weather. #crazyweather.

Food is such a guilty love of mine- I can only imagine how yummy this salad is! I would not have thought to put honey and cilantro together- but with the sweetness of the colored peppers, I bet this is just a delectable thing to eat!
