Nothing beats a steaming bowl of soup on a snowy day. This southwestern soup felt so nourishing and good for the soul this past weekend. It was brutally cold and ground had a fresh blanket of snow.
I recently got a slow cooker and I’m loving it so much. It’s so nice to come home to a warm meal. I also love it for meal prep for the week. This makes packing healthy lunches so simple. The possibilities are endless.
I threw all the ingredients for this soup in the slow cooker on Saturday morning and spent the rest of the snow day relaxing!
You omit the beef and add a variety of beans and veggies. You could also add cooked quinoa or rice. That would be so delicous. I used this Salsa, but store bought salsa will work too. Just keep it no-fuss and use what you have.
Garnishments are not essential, but they make life so much better, imo! I topped this soup with fresh cilantro, avocado and tortilla chips. Swoon.
This post is really making me wish I had some of this soup leftover for lunch! Soo good.
