Tex-Mex Shrimp Lettuce Cups

Ingredients

Avo Dressing

  • 1/2 avocado
  • 3 tablespoons red wine vinegar
  • 2 teaspoons honey
  • 1/4 cup fresh cilantro, chopped
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup water

Shrimp

  • 1/2 pound shrimp, peeled deveined
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1 pinch salt and pepper
  • 1 tablespoon olive oil

Cups

  • 1/2 avocado
  • 1/2 cup pineapple
  • 2 tablespoons fresh cilantro
  • 2 tablespoons minced red onion
  • 1 tablespoon lime juice
  • 1/2 cup black beans
  • 4 butter lettuce leaves

Instructions

  1. In a food processor combine avo dressing ingredients and puree until smooth. Set aside.
  2. In a small bowl combine 1/2 avocado, pineapple, black beans, lime juice, cilantro, and red onion. Toss and set aside.
  3. In a small saute pan heat up olive oil over med-high heat.
  4. Add in shrimp and saute until opaque and slightly browned.
  5. Season with chili and garlic powder and salt and pepper. Let cool slightly.
  6. To assemble the cups divide the shrimp up between four lettuce leaves, top with avocado pineapple mixture, drizzle the avo dressing and top with additional cilantro if desired.
