Summer Quinoa Salad - Petit Foodie
- 1 1/2 cups quinoa cooked
- 1/2 cup cucumbers, chopped
- 1 heirloom tomato, chopped
- 1 tablespoon chives, chopped
- 1/4 cup olive oil
- 1 teaspoon sugar
- 2 tablespoons Trader Joes Orange Champagne Vinegar
- salt + pepper, to taste
- In medium bowl whisk together sugar, olive oil, vinegar, chives, salt and pepper.
- Add in cucumbers, tomatoes and quinoa
- Toss until quinoa is even coated with dressing mixture.
- Serve at room temperature or chilled.
