Summer Quinoa Salad

Ingredients

  • 1 1/2 cups quinoa cooked
  • 1/2 cup cucumbers, chopped
  • 1 heirloom tomato, chopped
  • 1 tablespoon chives, chopped
  • 1/4 cup olive oil
  • 1 teaspoon sugar
  • 2 tablespoons Trader Joes Orange Champagne Vinegar
  • salt + pepper, to taste

Instructions

  1. In medium bowl whisk together sugar, olive oil, vinegar, chives, salt and pepper.
  2. Add in cucumbers, tomatoes and quinoa
  3. Toss until quinoa is even coated with dressing mixture.
  4. Serve at room temperature or chilled.
