Lemon Ginger Quinoa Soup - Petit Foodie
- 1/2 medium onion, chopped
- 2 carrots, chopped into bite sized pieces
- 2 celery ribs, chopped into bite sized pieces
- 1 clove garlic, minced
- 1 teaspoon olive oil
- 1/2 cup cooked quinoa
- 1/2 teaspoon salt
- 1 pinch pepper
- 1/2 teaspoon italian herbs, dried
- 1 juice of lemon
- 1 teaspoon fresh ginger, grated
- 3 cups chicken broth
- In medium pot heat olive oil over medium low heat.
- Add in onion, carrot, celery and saute until tender.
- Add in garlic, saute until tender - watching not to burn.
- Add in seasonings, quinoa, lemon juice, ginger.
- Add in broth and stir.
- Simmer 25-30 minutes on low.
