Lemon Ginger Quinoa Soup

Ingredients

  • 1/2 medium onion, chopped
  • 2 carrots, chopped into bite sized pieces
  • 2 celery ribs, chopped into bite sized pieces
  • 1 clove garlic, minced
  • 1 teaspoon olive oil
  • 1/2 cup cooked quinoa
  • 1/2 teaspoon salt
  • 1 pinch pepper
  • 1/2 teaspoon italian herbs, dried
  • 1 juice of lemon
  • 1 teaspoon fresh ginger, grated
  • 3 cups chicken broth

Instructions

  1. In medium pot heat olive oil over medium low heat.
  2. Add in onion, carrot, celery and saute until tender.
  3. Add in garlic, saute until tender - watching not to burn.
  4. Add in seasonings, quinoa, lemon juice, ginger.
  5. Add in broth and stir.
  6. Simmer 25-30 minutes on low.
