This is a quick, warm, filling and nutritious meal. Great for busy weeknights when you just can not muster up the energy to prepare a three course dinner.
Eat your veggies stir-fry
2 Carrots
2 Celery Ribs
2 Cloves of Garlic
½ Onion
1 t Olive Oil
½ package mushrooms
S+P, red pepper flakes (season to taste)
1/8 Cup low-sodium soy sauce
Optional: Cooked meat of choice, drizzle of maple syrup
Heat oil a medium sized pan. Add onion and garlic, sauté until onion is translucent. Add the rest of the veggies and sauté until tender. Lastly, add soy sauce, S+P, red pepper flakes and a drizzle of maple syrup and toss in meat to heat through (if using). Serve over brown rice and top with sesame seeds. Add more soy sauce if you choose.
