Pumpkin Chocolate Chip Muffins

Pumpkin spice is quite literally taking over everything this fall season.  You can’t go out without hearing or seeing pumpkin spice something.  It’s a bit crazy.  I kinda love it!  My house currently reeks pumpkin spice.  Thanks to these muffins and many cozy fall scented candles. Pumpkin Chocolate Chip Muffins

Serves: 12 muffins
  • 1.5 C White wheat flour
  • 1/2 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 C sugar
  • 1 C pumpkin
  • ½ C coconut oil, melted
  • 1 eggs
  • ½ C almond milk
  • 1 tsp cinnamon
  • ½ tsp pumpkin pie spice
  • ¼ tsp ginger
  • ½ C chocolate chips
  1. Preheat oven to 350. Line 12 muffin tin with muffin cups.
  2. Combine flour, baking soda and powder, salt, cinnamon, pumpkin spice, and ginger in a medium bowl and set aside.
  3. In a mixing bowl combine sugar, coconut oil, pumpkin, water and eggs. Mix together until full combine.
  4. Working in batches slowly add flour mixture to wet mixture. Stir until just combine.
  5. Fold in chocolate chips.
  6. Pour batter into each muffin cup. Only filling ½ way full.
  7. Bake for 18-20 minutes.
