Potato Cheddar Bites

These potato bites are perfect and so versatile.  I love this recipe because you can change it up in so many ways.   You could add a mixture of sweet potato and white potatoes.  You could do different cheeses.  I love the idea of adding spinach or kale to them.  The possibilities are endless.  With a picky eater in my family I stuck to the basic white potato and cheddar cheese.  These were delicious.

I might add I think these are even better leftover-straight out of the fridge.  Makes these little potato bites as an appetizer for your next get together.  They also make the perfect side dish or after school snack.

Potato Bites


1 C potatoes, peeled and grated

1 egg

¼ C bread crumbs

3 T onion, chopped

½ C sharp cheddar cheese

½ tsp salt

¼ tsp pepper


Preheat oven to 400*. Spray a mini muffin tin with non-stick spray.

Combine all ingredients in a bowl.

Spoon one table spoon of potato mixture into each mini muffin.

Bake for 18 minutes until tops are just golden brown.

    Has anyone tried freezing these little guys? :)

      I have not tried freezing them – they usually don’t last that long. But I would think they should be fine to freeze and then bake.

        If you want to freeze them you should definitely bake first. Potatoes oxidize and turn purple or brown (same as apples) so you can’t freeze potatoes before baking. Trust me, learned this the hard way! But I can’t see any reason you couldn’t bake them most of the way, freeze them, then pop them into the oven to brown up when you were ready to serve them.
