This was the recipe I finally entered into the Pom Wonderful Contest
Strip Steak with Gorgonzola Pomegranate Reduction
Ingredients
2 Strip Steaks {fat trimmed, patted dry}
1 T EVOO
1/2 t thyme
Salt + pepper {to taste}
Reduction
1/2 C Pom Wonderful Pomegranate juice
1/4 C dry white wine
1 t garlic
1 T honey
1 T EVOO
1 t cornstarch
1 t water
Pinch of thyme
Salt + Pepper
Finish
2 T gorgonzola
2 T Pom arils
Preparation
Streak
Preheat grill on medium high. Combine EVOO, thyme, salt and pepper. Massage mixture gently on the two steaks. Place on grill, until desired doneness.
Reduction
Preheat medium pan heat EVOO and add garlic, sautéing until fragrant. Slowly add in Pom juice, white wine, and honey. While the liquid mixture begins to simmer and thicken combine cornstarch and water in a small bowl. Slowly add the cornstarch mixture to the reduction, making sure to stir constantly. Once this thickens (about 3-5 min) add the thyme, salt and pepper.
Finish
Remove steaks from the grill placing on serving plate. Drizzle Pom reduction over the steaks and top each steak with 1 T of gorgonzola and 1 T of Pom arils.
