Winter dinners can be a bit challenging after awhile. I’m always so excited to get cozy dinners on the table in late fall/early winter. Then comes January and I’m like ‘ughhhhh what should we have?!’ It’s that time of year where you want to eat healthy but fresh veggies and fruits are limited.
I’m working with our family to start eating more seasonal. While we all want fresh Romaine salad it’s just not always good or practical in the winter months. I’ve slowly been trying to add in more dark winter greens like kale and Swiss chard.
