I’m such a snacker. While most of the time it’s healthy snacks I’m shoving in my face. Some days though, I love bad for you snacks. I wont’ lie. I have been craving dips like mad lately. But I wasn’t willing to settle for my usual really bad for you cheesy dips. I wanted something light and fun.
I made this light Mediterranean Dip Sunday afternoon when we had a few people over. It’s not a heavy dip so you don’t feel like you weight a ton after eating it. I served this with crackers, carrots and cucumbers. It was beyond good. The artichokes and sundried tomatoes are so wonderful together.
This dip makes for an easy appetizer for any party. So round up your besties and get your dip on.
Mediterranean Dip
{ingredients}
1 C light sour cream
3 T mayo
½ C chopped artichoke hearts
2 sundried tomatoes, minced
1 clove garlic, minced
2 scallions, chopped (including green part, reserve 1 T for garnish)
½ tsp paprika
1 tsp basil, dried
½ tsp salt (more to taste if needed)
¼ tsp pepper (more to taste if needed)
¼ C feta

Combine first 10 ingredients.
Gently fold in feta.
Cover and refrigerate for 1 hour.
Garnish with reserved scallions and serve with crackers, veggies, or pita chips.
