My mom always made sure to make our Christmas extra special growing up. We always had the most wonderful foods during the holiday season. Creamy cranberry desserts, pecan snow balls, loaded mashed potatoes, gumbo, steaks, marinated mushrooms, fudge, Bailey’s hot cocoa…just to name a few. These were all special treats that we did not get throughout the year.
Since we live several states away from each other I don’t get to have these special treats every year. I never realized how much a part of my Christmas they were until now. I had these horrible cravings for ‘my’ traditional Christmas food. I missed our family get together and fun traditions.
These amazing marinated mushrooms may not be my mother’s but they sure bring back some great memories.
This recipe is a no fuss, easy and super affordable appetizer to impress your Holiday guests. Look for mushrooms and fresh herbs that are on sale at your grocery store. Throw all the ingredients in a zip lock bag, place in fridge overnight and forget about them until your guests arrive.
*Note: I left some of my mushrooms whole and cut some in ½. I must say the ones cut in ½ tasted so much better. The dressing marinated into them more thoroughly.
Marinated Mushrooms
{ingredients}
1 lb button mushrooms, (medium, cut in half)
½ C EVOO
3 T champagne vinegar
1 clove garlic, minced
3 scallions, chopped (a little of the green for color)
1 T fresh tarragon, chopped
1 tsp Italian seasoning
½ tsp salt
½ tsp pepper
{directions}
Place all the ingredients in a zip lock bag.
Massage mushrooms lightly.
Place in refrigerator overnight.
Serve chilled.
