Lightened Up Creamy Shrimp Pasta

Creamy, cheese and oh so delicious! This lightened up version of my favorite shrimp pasta might lack a few calories from the original version, but does not lack in flavor.

I love this shrimp pasta dish so much.  I prefer it over the original pasta dish, that is way too heavy and rich.  Leaving out the heavy creamy and tons of cheeses helps to lighten this pasta dish up.  You don’t leave the tabling like you can’t do anything the rest of the evening.

This dish literally comes together in about 15 minutes, making it perfect for weeknight meals.  I added lemon and fresh spinach to not only brighten up the recipe but also add in some great nutrients to make it a well rounded meal.  I served with a side of steamed green beans.

Lightened Up Creamy Shrimp Pasta

Ingredients

  • 1 pound shrimp, thawed and cleaned
  • 3/4 pound pasta, I used GF
  • 1 tablespoon butter
  • 1 shallot
  • 1/2 cup half & half
  • 1 1/4 cups chicken broth
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt + pepper
  • 1/2 cup parmesan, grated
  • 1/2 lemon, zested and juiced
  • 1 cup spinach, fresh

Instructions

  1. In large pot bring salted water to a boil add in pasta and cook according to packaged direction. Drain and set aside.
  2. In a large skillet heat 1/2 tablespoon butter. Add in shrimp and saute until cooked- about 4-5 minutes.
  3. Remove from pan and set aside.
  4. Add in remaining butter and shallot. Saute until tender.
  5. Whisk in cornstarch. Once combine with the butter slowly whisk in half & half and broth.
  6. Season with salt and pepper. Let simmer but do not boil for about 4 minutes. Whisking as needed.
  7. Once thickened add in cheese and whisk until melted.
  8. Now add in spinach and let wilt down.
  9. Add in shrimp, pasta, lemon zest and juice. Stir until covered in sauce.
  10. Serve hot and topped with additional Parmesan.
