Lemon Ginger Quinoa Soup

A delicious winter soup that is detoxifying and comforting. This lemon ginger quinoa soup is perfect for cold and flu season.  This time of year we could all use a little boost for our immune systems.

I love this lemon soup because it is not overly heavy and it’s quite refreshing with the lemon and ginger flavors.  A big bowl of this soup is sure to send those sniffles and uneasy body pains away.

Awhile back I created this Lemon Garlic Orzo Soup that has been a hit.  Something about the idea of have a warm simple bowl of broth and lemon juice  always appeals to me during this time of year.   I love soup but sometimes they can get heavy and just be a bit too much.  This recipe provide the warmth of soup with out the heaviness of cream.  I love that it is light and refreshing.

Lemon Ginger Quinoa Soup

  • Prep Time: 5m
  • Cook Time: 30m
  • Serves: 4

Ingredients

  • 1/2 medium onion, chopped
  • 2 carrots, chopped into bite sized pieces
  • 2 celery ribs, chopped into bite sized pieces
  • 1 clove garlic, minced
  • 1 teaspoon olive oil
  • 1/2 cup cooked quinoa
  • 1/2 teaspoon salt
  • 1 pinch pepper
  • 1/2 teaspoon italian herbs, dried
  • 1 juice of lemon
  • 1 teaspoon fresh ginger, grated
  • 3 cups chicken broth

Instructions

  1. In medium pot heat olive oil over medium low heat.
  2. Add in onion, carrot, celery and saute until tender.
  3. Add in garlic, saute until tender - watching not to burn.
  4. Add in seasonings, quinoa, lemon juice, ginger.
  5. Add in broth and stir.
  6. Simmer 25-30 minutes on low.
