Lemon Bars

For years now I have been dying to make lemon bars.  But it was one of those recipes that always got pushed to the back burner.  Maybe it was because I had never had a lemon bar before.  I didn’t know the goodness I was missing.

 Yes, I’m 27 years old and I had never had a lemon bar until two days ago.  {Please, don’t judge me!} I’m not an authentic southern belle, apparently.

 Down here in the South it is not spring until the lemon bars are on the table!  These Southern folk know what’s right.

Lemon Bars

Adapted from southern living and david lebovitz



1 C flour

½ C powdered sugar

Pinch of salt

8 T butter, melted

{Lemon Filling}

¾ C sugar

2 eggs, room temp

1 lemon, cut out segments

Juice of 1 lemon

Zest of 1 lemon

3 T cornstarch

Pinch of salt

Powdered sugar, garnish


Prepare an 8 inch square baking pan.  Preheat oven to 350*

Mix crust ingredients until just combine.  Press down in prepared pan and bake for 20. Until just golden brown.

In blender place lemon segments, lemon juice, zest of lemon, sugar, eggs, cornstarch and salt.  Blend until just barely smooth. 

Remove crust from oven and reduce heat to 300*

Pour lemon batter over crust.

Bake for 20 minutes.

Remove and let cool. 

Dust powdered sugar over cooled bars.

    I love lemon bars, but I have only ever had them from a boxed mix (and they are delicious). I will be giving this a try for sure!

    Oh, I was wondering about something so lemony! I ALWAYS cut out the lemon recipes, but am afraid I’m the only one that would eat it. I have a lemon iced box pie I am dying to try. These bars sound good, too.
