Kale and Quinoa Tabbouleh

This refreshing and hearty tabbouleh is perfect for a week day lunch idea.  It has a refreshing flavor and lots of texture to make it completely satisfying.

I’m not sure if it’s the heavy meals and robust fall flavors but all week I have been craving something light and refreshing.  Enter this amazing kale and quinoa tabbouleh.  I adore this recipe and it’s one I go to over and over again.

I love the refreshing lemon and olive oil dressing with the mixture of kale, parsley and mint.   It’s just the perfect light dinner or lunch.  After Thanksgiving and with Christmas parties coming up this salad is perfect to lighten up the week and help you stay on track.

Kale and Quinoa Tabbouleh

  • Serves: 4


  • 2 cups kale, chopped finely
  • 2/3 cup parsley, chopped finely
  • 1/3 cup mint, chopped finely
  • 1 cup quinoa, cooked
  • 3 tablespoons olive oil
  • 2 lemons, juiced
  • 1 hot house cucumber, chopped small bites
  • 2 small tomatoes, deseeded and chopped small bites
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon sugar


  1. In a large bowl whisk together olive oil, lemon juice, sugar, salt and pepper.
  2. Add in cooled quinoa, kale, parsley and mint.
  3. Massage with hands or toss well.
  4. Add in tomatoes and cucumber and toss.
  5. Store in airtight container. Place in fridge for 1-2 hours. Serve.
