I would like to bid winter adieu with a big bowl of Italian Lentil Soup. This soup is filling and absolutely delicious.
This modest lentil soup may be full of inexpensive ingredients and take a mere 30 minutes to make but it is a recipe your family will adore. It is sure to get you through the wet chilly days of spring.
I topped my soup with a small sprinkle of Parmesan cheese but you could go for fresh herbs or croutons. I would suggest going light on the salt to begin with. Since there are added olives these bring out a salty flavor as they cook. Save the salting for the end when you can get a real handle on how salty your olives are.
