Italian Lentil Soup

I would like to bid winter adieu with a big bowl of Italian Lentil Soup.  This soup is filling and absolutely delicious.

This modest lentil soup may be full of inexpensive ingredients and take a mere 30 minutes to make but it is a recipe your family will adore.  It is sure to get you through the wet chilly days of spring.

I topped my soup with a small sprinkle of Parmesan cheese but you could go for fresh herbs or croutons.  I would suggest going light on the salt to begin with.  Since there are added olives these bring out a salty flavor as they cook.  Save the salting for the end when you can get a real handle on how salty your olives are.

This was an insanely delicious way to send old man winter out the door.  Now I’m completely ready for all things spring.

Italian Lentil Soup

  • Cook Time: 30m
  • Total Time: 40m
  • Serves: 4


  • 1/2 cup carrots, chopped
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 zucchini, chopped
  • 1 14 ounce can crushed tomatoes
  • 1 cup lentils
  • 1/2 cup olives
  • 1 tablespoon olive oil
  • 1 teaspoon Italian herbs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon red pepper flakes
  • 4 cups chicken broth


  1. In large pot heat olive oil
  2. Saute onions, garlic, zucchini, carrots until tender.
  3. season with salt and pepper.
  4. Add in crushed tomatoes, lentils and broth.
  5. Add seasonings.
  6. Bring to a boil.
  7. Reduced heat to a simmer let lentils cook for about 30 minutes.
