Greek Chickpea Salad

This salad screams summer.  All of the flavors play so well together.  I love anything Greek!  This is the perfect summer side dish.  The flavors are great but honestly I might just love it because it take less than 5 min to throw together!!

Show up at party with this gourmet salad and no one will ever guess less than an hour ago you were chasing a naked child around your house begging her to put her clothes on, tripping over strawberry shortcake dolls  and about ready to pull your hair out!

Greek Chickpea Salad

{ingredients}

1 can chickpeas {drained and rinsed}

1/4 C red onion {chopped}

1/4 C olives

1/2 can artichoke hearts {chopped}

1 tomato {diced}

Crumbled feta

2-3 T fresh basil {chopped}

pinch of red pepper flakes

salt and pepper to taste

1 T EVOO

1 T Lemon Juice

{Directions}

Combine all ingredients.  Chill for 30 minutes.

    Such a great summer bbq side dish! Chickpeas and feta go together SO well. Delicious. And- I just love that its easy!

    Sounds light and refreshing. I bet it would be tasty with Kalamata olives in it, too, just to up the Greek factor.
