My mom recently came to visit and brought a huge bag a of pistachios. All I could think about was making some delicious crispy chocolate chip cookies with them. Two flavors that just go together.
Pistachios are one of my favorite nut. Mostly, because for their gorgeous green and outer purple hue. So festive. I also adore their distinct, but not overpowering, taste. They go perfectly with the semi-dark milk chocolate chips.
These are a crispy cookie with a chewy middle. I’m always torn between chewy and extra soft gooey cookies. I find them equally satisfying.
Can you believe these beauties are gluten free? I actually don’t even tell my family any more when things are gluten free. They ate these cookies like they were going out of style. I was astonished to see half the bag of them finished off. They are seriously addicting.
