Gluten Free Peanut Butter Kisses

Wow, Christmas is 6 days away!! That is SIX DAYS people!! Do you have all of your Christmas shopping and baking done?  Yeah, me either. Not even close.

I must say though I am just about done baking.  Every year Ava, gets sick right around the Holidays and I’m left with a pile of cookies I’m too scared to give anyone.  I would hate for them all to get the flu because of my pretty cookies. 

Honestly, I’m getting a little tired of spending the money on high quality baking ingredients and then not being able to give my baked goods away.  I think for the next few years we might just do holiday baking for us and get everyone else small gifts. 

I do love the idea of giving baked goodies as gifts though.  It’s quite the dilemma and I know anyone with small children knows what I’m talking about.  Elementary schools are a haven for germs!

I must say I was glad these cookies were out of the house before the flu struck.  I think I could have easily eaten them up with no regrets.  They are so easy and I was beyond amazed when they came out looking perfect.  They have no flour!!  Who knew gluten free could be so good?

 

Gluten-Free Peanut Butter Kisses

(adapted epicurious)

{ingredients}

1 C smooth peanut butter

¾ C brown sugar

1 egg

½ tsp baking soda

½ tsp baking powder

1 tsp vanilla

½ bag Hersheys’ Kisses

{directions}

Preheat oven to 350°F.

Mix first 6 ingredients in medium bowl.

Using moistened hands, form generous 1/2 tablespoon dough for each cookie into ball.

Arrange on 2 ungreased baking sheets, spacing 2 inches apart.

Make a small thumbprint into the center of the cookie.

Bake cookies until puffed, golden on bottom and still soft to touch in center, about 12 minutes.

Once slightly cooled place Hershey’s Kiss in center.
