Gluten Free Lemon White Chocolate Blondies

These chewy lemon cookie bars are perfectly refreshing and sweet.   These are the perfect treat for spring.

Lemon is such a wonderful way to bright up baked goods.  When put in the oven to bake the flavor of the lemon intensifies.  Paired with white chocolate these blondies really come to life.

We have had temperatures in the near 80’s this week.  Our trees and flowers have started to blossom.  While I’m thankful for the warm sunshine, it breaks my heart that most of our spring flowers will die with the cold temps coming in the next week.

But the warm air definitely cleared out the winter blues and brought on some spring baking inspiration.  With it came these delicious lemon white chocolate blondies.  You could surely replace the gluten free flour with white all purpose flour if you are not gluten sensitive.

Gluten Free Lemon White Chocolate Blondies

  • Cook Time: 20m
  • Total Time: 30m
  • Yield: 12 bars

Ingredients

  • 1/2 cup butter, room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 tablespoon lemon juice
  • 1/2 zest of half lemon
  • 1 teaspoon baking powder
  • 1 1/2 cups gluten free all purpose flour (I used Krusteaz)
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips, 1/4 cup reserved

Instructions

  1. Preheat oven to 350*. Line 9x9 baking dish with foil or parchment paper.
  2. Using mixer blend butter and sugar until creamy and smooth.
  3. Add in lemon juice and zest. Mix.
  4. Add in egg. Mix.
  5. Add in baking powder, salt and flour and mix until just combine.
  6. Fold in 3/4 cup white chocolate chips.
  7. Place batter in pan and using spatula or hands press firmly down until batter is even.
  8. Top with remaining white chocolate chips.
  9. Bake for 20 minutes or until top is golden brown and center is firm.
  10. Remove from oven and let cool for 1 hour on counter. Cut and place in air tight container.
