Gluten Free Lemon Bundt Cake

This delicious gluten free lemon bundt cake is tender and moist.  It makes for the perfect breakfast, snack or sweet dessert.

Mother’s Day is less than a week away! What better way to treat mom than with this lemon cake.  It is such a special treat.  It can be made ahead of time or served straight out of the oven.  This cake is best served the same day or up to one day after baking.

I adore anything lemon flavored.  This cake is delicious topped with berries that have been lightly dressed in sugar and let sit for a few hours.  To make this extra stunning I love adding a dollop of whipped cream.

Gluten Free Lemon Bundt Cake

  • Yield: 1 bundt cake

Ingredients

Lemon Cake

  • 3/4 cup butter, room temperature
  • 2 cups Gluten Free All Purpose Flour
  • 1 package (2 1/4 teaspoon) Quick Rise Red Star Yeast
  • 1 3/4 cups granulated sugar
  • 3 eggs
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon xanthan gum
  • 1 teaspoon salt
  • 1 1/4 cups milk

Lemon Glaze

  • 1 cup powdered sugar
  • 1 pinch salt
  • 1 tablespoon lemon juice
  • 1 tablespoon milk

Instructions

  1. Preheat oven to 325*. Grease standard size bundt cake
  2. Melt butter in the microwave until completely melted. Add in 1/2 Cup milk to warm.
  3. Whisk in yeast.
  4. In a large mixing bowl beat sugar and butter mixture until light and fluffy.
  5. Add in eggs, one at a time. Add in lemon juice.
  6. In a separate bowl whisk together flour, xanthan gum, and salt.
  7. Alternating flour and milk combine into the wet mixture.
  8. Mix until just combine.
  9. Pour batter into wet mixture.
  10. Place in warm area for 30 minutes.
  11. Bake for 45-60 minutes.
  12. Remove from oven and let cool for 1 hour.
  13. Meanwhile, whisk together powdered sugar, salt, milk and lemon juice.
  14. Once cake is cooled top with glaze.
