Gluten Free Grilled Flatbread

This gluten free flatbread is the best way I think of to end summer.  With Labor Day nearing, this amazing flatbread will be a hit at your grill out.

The toppings are endless or you could simple cut the flatbread it wedges and serve with hummus or seasoned olive oil.  My absolute favorite way to eat these are to top with mozzarella, fresh Heirloom tomato slices and fresh basil.  It is truly summer in every bite.

Grilled bread has always been one of my favorite summer treats.  After going gluten free I truly missed it.  These flatbreads have filled the void quite perfectly.  They are crispy and have a wonderful flavor.

I love the way the juicy heirloom tomatoes coat the grilled bread making a sauce, of sorts.  Then topping the gooey mozzarella and fresh basil makes for the perfect bite!

These have been on repeat on our dinner menu all summer long.  I hope your family loves them as much as we do!

 

Gluten Free Grilled Flatbread

  • Prep Time: 45m
  • Cook Time: 10m
  • Total Time: 55m
  • Yield: 4 flatbreads

Ingredients

Flat Bread

  • 1 cup All Purpose Gluten Free Flour
  • 1/4 cup cornstarch
  • 1 1/2 teaspoons Red Star Yeast Quick Rise Yeast
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1 pinch sugar
  • 1 cup water
  • 1 teaspoon Italian Seasoning

Toppings

  • mozzarella
  • Heirloom tomatoes
  • Fresh Basil
  • olive oil
  • pesto or marinara sauce

Instructions

  1. In a large bowl whisk together yeast, water and pinch of sugar. Let sit 5 minutes.
  2. Add in flour, cornstarch, xanthan gum, salt.
  3. Combine until a small ball forms.
  4. Cover and set in a warm area for 30 minutes.
  5. Preheat grill to medium-high heat (about 400*)
  6. Divide dough into 4 sections.
  7. Using two sheets of parchment paper place a section of dough between them and roll out to thin round disk. About 1/2 inch thick.
  8. Brush with olive oil and place on grill. Grill about 4 minutes on each side.
  9. Remove from grill and sprinkle on Italian seasoning. Top with desired toppings and place back on grill for about 3 minutes.
  10. Serve warm.
