For winter I can’t think of a better combination than cranberry and orange.  They go together so perfectly.  Complementing tart and sweet flavors.

My family is not gluten free and they don’t love gluten free baked goods.  But they all went crazy for these cranberry orange muffins.  The texture mirrors regular muffins. There is just a slight amount of sweetness that is perfect for wintery mornings.  They also make the perfect snow day snack.

Gluten Free Cranberry Orange Muffins

  • Yield: 9 muffins


  • 1 cup gluten free AP flour
  • 1/2 cup almond flour
  • 1/2 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup almond milk
  • 1/4 cup orange juice
  • 1/4 cup oil
  • 2 eggs
  • 3/4 cup cranberries


  1. Preheat oven 350*. Line muffin tin with 9 liners.
  2. Whisk together milk, oj, oil, eggs and sugar until combine.
  3. In a seperate bowl combine flours, baking powder and salt.
  4. Working in batch mix together flour into wet mixture until combine.
  5. Fold in cranberries.
  6. Pour batter into muffin liners. If you have any empty muffin spaces pour a small amount of water into them. This will ensure muffins are moist.
  7. Bake for 20-25 minutes. After 20 minutes keep an eye on.
  8. Remove from oven and let cool on cooling rack. Store in airtight container for up to 3 days.
