A good salad for fall is a must. This Fall Kale Salad will definitely be making an appearance on our Holiday table this year. It adds a gorgeous color to the table and tastes amazing.
I massaged the kale with a wonderful citrus balsamic vinaigrette and topped it with a variety of textures. This fall kale salad is the perfect side dish to bring to Thanksgiving dinner or serve to all your guests. Everyone will love it.
If you are not a huge squash fan, like myself, I would suggest using a delicata squash and thinly slicing it. I roasted mine with some olive oil, salt and pepper. It turned out perfectly and does not have a potentate squash taste that will over take the salad. It is very mild and when paired with the kale and pomegranate is it delicious.
I also added in some pumpkin seeds for addition texture and color. I have been obsessed with pumpkin seeds this season. They are delicious and perfect on any salad.
