We had the first snow/ice storm of the winter today. It was a chilly, wet day. The perfect day for a warm bowl of soup and glass of wine.

I adore creamy soups but despise the high calories that come with them. I chose to use half and half to cut down on the calories and fat but wanted to keep the creaminess. Wild rice is quite amazing. It is really good for you and has an out of this world texture. If you’ve never tried it you really must! The chewiness gets me every time. Amazing.

Creamy Wild Rice Soup
{ingredients}
½ C Wild rice
1 C white rice, cooked
2 T butter
3 ribs celery, diced
1 small onion, diced
1 clove garlic, minced
1 T parsley
5 C Chicken Broth
½ white wine
1/2 C half and half
2 T flour
1 tsp salt – more to taste
¼ tsp pepper – more to taste

In a big pot heat butter.
Sauté onion, garlic and celery until just tender.
Add in wild rice, white wine and broth and cook according to package directions.
In a small bowl whisk flour and half and half, set aside.
Once wild rice is tender whisk in half and half mixture until soup begins to thicken a bit.
Add in cooked white rice.
Season with salt, pepper and parsley.
Let simmer for 15-20 minutes.
