Cranberry Kale Salad with Cranberry Vinaigrette
Serves Two
{ingredients}
3 C kale, cleaned and stems removed
¼ C red cabbage, shredded
¼ C carrots, julienned
¼ C red onion, julienned
3 T dried cranberries
3 T pecans
½ pear, sliced thinly
{vinaigrette}
1/3 C olive oil
3 T cranberry juice
1 tsp sugar
¼ tsp salt and pepper
¼ tsp basil
{directions}
Prepare all salad ingredients and combine in a large bowl. Set aside.
In a small bowl whisk together vinaigrette ingredients.
Pour vinaigrette over salad when ready to serve.
