Coconut Honey Almond Butter

I couldn’t wait to share this almond butter recipe with you all! It is creamy and tastes out of this world good.  You will never need to buy store-bought almond butter again.

Coconut Honey Almond Butter

I always cringe at the price of almond butter.  It is so good but I’ve always thought of it as such a treat because of the price.  I recently got a huge bag of almonds from Costco so I decide to give homemade nut butter a try.

The process does take some time if you do not have a high speed blender or strong food processor.  But I can tell you my mini food processor worked just fine.  It took a good 20-25 minutes of processing to get it to the correct consistency.  You do need to watch it because you can over process causing it to be too runny.

I added a bit of honey to sweeten and some shredded coconut.  This combo made for the best almond butter I have ever had.

I spread this over Trader Joe’s Gluten Free white sandwhich bread.  Btw, this bread is so amazing.  If you are gluten sensitive you need this bread in your life.  The cinnamon raisin is also spot on.  I have been eating this every morning for several weeks now.  I can’t stop!

Coconut Honey Almond Butter

  • Prep Time: 25m
  • Total Time: 25m
  • Yield: 1.5 cups

Ingredients

  • 1 cup almonds
  • 1/4 cup shredded dried coconut
  • 1 tablespoon honey
  • 1/2 teaspoon salt, optional*

Instructions

  1. In a food processor place almonds.
  2. Process until smooth. This may take awhile - I used a mini Kitchen Aide food processor and it took 20-25 minutes. Be patient and there is a quick turning point where it goes from smooth to runny. After 15 minutes check it every few minutes scraping down the side.
  3. After you reach the desired consistency pour in honey and coconut.
  4. Pulse a few times to combine.
  5. Pour butter into an airtight container.
  6. *My almonds were slightly salted so I did not add any salt.
