Chocolate Covered Coconut Balls

Merry Christmas Eve!  I hope you all are enjoying time with your loved ones this Holiday season. 

These coconut balls are one of my favorite Christmas cookies.  I love coconut and chocolate.  Christmas would not be the same without them.  They are a little rich but have the most wonderful texture on the inside.  I don’t mind splurging on a few of these. 

Indulge in a few of your favorite treats over the next few days and be thankful for everything and everyone in your life.  Without your health, family and friends all these treats and gifts are meaningless. 

I want to take a moment and thank each and every one of you for stopping my blog this past year.  You have no idea how grateful I am that you check in to read and try my recipes.  I would give each of you a huge hug if I could.  So let’s play pretend and get on over here for hugs and chocolate coconut balls!

Coconut Balls

{ingredients}

1 box powdered sugar

1 stick butter

1 (14oz) pack coconut

1 tsp vanilla

¼ C sweetened condensed milk

{directions}

Mix first five ingredients until well combined.

Chill in fridge for at least two hours or overnight.

Roll into ½ T balls and freeze for 20 minutes.

Meanwhile, in a double broiler melt one bag semisweet chocolate chips until melted.

Dip frozen coconut balls in chocolate.
