Chicken Tostadas with Chipotle Cream Sauce

Crispy tortillas topped with chicken, cheese and fresh summer corn, cilantro and tomatoes!  Doesn’t get much better – unless it’s drizzled with a smokey chipotle cream sauce!

I’m pretty sure I could eat this meal every day for the rest of my life.  I love these tostadas so much.  I have had them 2 times in the past week and half.

Let’s take a moment for the chipotle cream sauce!!  It is the perfect amount of smoky and zesty.  I want to drizzle this stuff on everything from a fried egg to avocado toast to fries!  Seriously, it is a must make!

You may need a few napkins for this meal but the mess is worth every bite!


Chicken Tostadas with Chipotle Cream Sauce

  • 1 cup chicken, cooked and shredded
  • 5 corn tortillas
  • 1 tablespoon olive oil
  • 1/2 cup cheddar cheese, grated
  • 1/2 cup black beans
  • 1/4 cup fresh corn
  • 1/4 cup tomatoes, chopped
  • 1/2 jalapeno, diced
  • 1/2 cup cilantro, chopped
  • 1/2 whole lime, juice

Chipotle Cream Sauce

  • 1/2 whole lime, juice
  • 1/2 cup sour cream
  • 1 chile in adobe sauce, chopped
  • 1 teaspoon adobe sauce


  1. Preheat grill pan. Brush both side corn tortillas with oil.
  2. Place on grill until dark brown grill marks appear and flip. Repeat until all are grilled. Set aside
  3. In food processor add cream sauce ingredients and pulse until combine. Pour or spoon into squeeze bottle, if desired.
  4. Place tostadas on sheet pan and top with equal amounts of chicken, cheese, corn and beans.
  5. Place in preheated oven, 350*, until cheese is melted. (optional)
  6. Top with tomatoes, cilantro, jalapeno, squeeze of lime and drizzle cream sauce on each one.
