Here is an easy, budget friendly, week night meal. It takes literally 15 minutes to throw together. The flavors of this casserole turned out great. Anything that is simple and you can whip up in a few minutes is a keeper in my book. This can also be prepared in advanced and froze or refrigerated over night.
Ingredients:
- 1/3 cup butter
- 2/3 cup chopped onion
- 1 box broccoli, thawed
- 1 cup barley
- 1 (10 3/4 ounce) can condensed cream of chicken soup
- 2 cups water
- 1-2 cup chopped cooked chicken
- Pinch thyme
- Salt and pepper to taste
- 1 cup cheese, divided
Directions:
Heat oven to 350.
Grease a 2 quart baking dish.
In a large skillet over medium heat, melt butter
Add onion. Cook and stir till tender.
Add barley, cook about 2 minutes or till light golden brown, stirring frequently.
In a medium bowl, combine remaining ingredients.
Add barley mixture and ½ cup cheese, mix well.
Pour into prepared dish.
Add remaining ½ cup cheese to the top of the casserole.
Cover and cook about 1 hour and 15 minutes or until liquid is absorbed.
Stir well before serving.
