I hope you all had a wonderful long Memorial Day weekend! Over the weekend I made this incredible cherry corn slaw. It was seriously one of the best things I have eaten in a while.
Cherry season is my all time favorite. The cherries definitely made this salad! With the addition of sweet corn and a slightly sweetened dressing this side could have been my main course. Which you could easily pull off! I have made another batch for my lunches this week. I can hardly keep myself out of the fridge from getting a few bites.
I added pistachios because they are vibrant in color and I have a huge bag I’m working through. But I think almond or pine nuts would be great options.
The use of premade slaw makes this salad so easy to assemble. You could by all means cut up your own slaw mix. My mix was from Whole Foods and had shredded cabbage, carrots, kale and red pepper.
This cherry corn slaw will definitely be on all my BBQ tables this summer!
