Grilling is one of my favorite things to do in the summer. It just makes life complete. The wonderful aroma wafting through the air is sure to make anyone hungry. Seasoned, grilled shrimp is quite possibly one of the best foods around.
My little brother graduated this past weekend and for his celebration dinner my mom made these Cajun shrimp skewers. They disappeared within minutes of coming off the grill. Saying they were delicious is quite an understatement.
I might add that they went perfectly with margaritas! Cheers to celebrations and summer!
Cajun Shrimp Skewers
{ingredients}
1 lb shrimp, cleaned and deveined
1 tsp Cajun seasoning
¼ C olive oil
½ tsp lemon juice
1 clove garlic minced
{directions}
In a large ziplock bag place ingredients and massage lightly.
Let marinate in fridge for 30 minutes.
Meanwhile heat up the grill.
If using wooden skewers, soak them in water while shrimp is marinating.
Remove shrimp and skew on skewers.
Make sure your shrimp is on medium heat.
Grill shrimp for 2 minutes on each side.
Grilled Veggies
{ingredients}
1 lb asparagus, cleaned and cut in thirds
1 pint mushrooms, cleaned, chopped
1/3 C olive oil
Season liberally with salt and pepper
{directions}
Combine ingredients in a bowl.
Line grilling basket with tin foil, (do this so veggies do not get overly charred + clean up is easy peasy)
Place cut and seasoned veggies in the basket
Grill for 15-20 minutes.
