After a busy day, I love coming home to an easy but delicious dinner to make.  This buffalo chicken recipe is one of my favorites.  It’s so simple and yet it’s delicious and comforting.

I have never been a huge fan of buffalo sauce.  This combination of bite-size pieces of chicken lightly coated in the sauce over rice is the perfect combo.  I also find the brand of sauce you get matters.  I really prefer Sweet Baby Rays, most people love Franks though.  It’s really just whatever you prefer.  I also believe you must must must add the fresh cilantro.  It gives the heavy buffalo sauce a bright refreshing taste.  If you love red onions, I would totally add them.   My family loathes onions so I didn’t add.

Buffalo Chicken Bowls

  • 1 pound chicken, cut into bite size pieces
  • 1/2 cup Buffalo Sauce
  • 2 tablespoons olive oil
  • 1 tablespoon cilantro
  • 1/4 cup mozzarella, shredded
  • 1 cup rice, cooked


  1. Season chicken with salt and pepper.
  2. In a medium saute pan heat 1 tablespoon of olive oil. Add 1/2 the bite size pieces of chicken.
  3. Saute over medium heat until golden brown.
  4. Once cooked through, about 5-7 minutes, place on plate.
  5. Add remaining olive oil and chicken to pan. Saute until cooked through.
  6. Add the previously cooked chicken back to the pan and add in buffalo sauce.
  7. Stir until coated.
  8. In two bowls add 1/2 C rice, desired amount of chicken and top with cheese and cilantro. Serve.
  9. Store any left over chicken in airtight container in fridge for up to 2 days.
