Broccoli Mac and Cheese

Stove top mac and cheese is one of the easiest, most delicious dinners I can think of.  It makes me feel like a kid and I love not having too many dishes to do.  The fact that it’s on the table in less than thirty minutes really puts it at the top of my favorites list.

I added broccoli to this mac and cheese to make it healthier and add some vibrant color.  I honestly prefer stove top macaroni and cheese over baked.  It’s so much creamier and just has an overall better taste to me.  Plus, I like that it’s less time consuming.

Broccoli Macaroni and Cheese

{ingredients}

1 lb small cut pasta of choice

2 C broccoli florets

1 1/2 C low-fat milk

1 C chicken broth

3 T flour

½ tsp salt

¼ tsp pepper

¼  tsp garlic powder

2 C reduced –fat sharp, cheddar cheese

{directions}

Combine flour and milk in a medium sauce pan, set aside.

Cook pasta according to package directions.

Place broccoli florets in pasta water during the last 2 minutes of cooking.

Drain, set aside.

After flour has dissolved place sauce pan with milk on stove over medium heat.

Whisk in chicken broth.

Add in cheese and stir continuously until melted and sauce has thickened.

Season with salt, pepper and garlic powder.

Pour sauce over pasta.

Serve.
