Breakfast Quesadillas

Lets start our week off with these delicious breakfast quesadillas.  They may not be the most photogenic food but they are so filling and delicious.  These make morning so much more enjoyable.  A great way to start the day.

Mexican food is one of my favorites.  I could eat this salsa any time, day or night.  I could literally eat it on anything.  It is so good and makes these simple quesadillas perfect.

Ava loved these.  I made a few extra so she can warm them up during the week, before school.  They are so easy to prep on Sunday and have ready throughout the week.

Breakfast Quesadilla

  • Cook Time: 15m
  • Total Time: 20m
  • Yield: 4 small quesadillas


  • 1/2 pound ground spicy sausage
  • 4 eggs
  • 2 tablespoons water
  • 1/2 cup shredded cheese
  • 8 corn tortillas
  • salt and pepper
  • 2 teaspoons oil


  • scallions
  • salsa
  • avocado


  1. In skillet saute sausage until browned and cooked through. Season with salt and pepper. Set aside.
  2. In a bowl whisk together eggs, water and season with salt and pepper.
  3. Wipe out skillet and add eggs. Scramble over low-med heat until cooked through.
  4. To assemble add layer of cheese, eggs, and sausage and finish with another layer of cheese on to the tortillas. Top with final tortilla.
  5. In a large nonstick skillet add 1 tsp oil. Add in tortillas, as many that will fit in your pan. Brown on each side. Repeat with remaining.
  6. Remove from pan and cut into halve or quarters. Top with your fave garnishments.
