This salad is such a great one for hot summer days. It’s refreshing and full of flavor and texture. Marinated artichoke hearts are simply the best. They go perfectly with the couscous.
I cook this couscous in chicken broth to add extra flavor. I also make a delicious dressing to bring all these ingredients together. After chilling in the fridge for a few hours this salad is ready to serve. Take this on your next picnic and your company will swoon.
Feel free to add a little feta cheese. That would really add some pizzazz to this salad. Either way I think you are going to love this recipe.
Artichoke Couscous Salad
{ingredients}
½ C couscous
1 C chicken broth
1 jar marinated artichoke hearts, reserve marinade
½ Cucumber, peeled and deseeded
¼ C red onion, chopped
1 roma tomato, chopped
2 T balsamic vinegar
1 tsp lemon juice
{directions}
Cook couscous according to package directions. I used chicken broth in place of water.
Chop artichoke hearts, cucumber, onion and tomato.
In a small bowl whisk 3 T marinade from artichoke hearts, balsamic vinegar and lemon juice.
Season dressing with salt and pepper to taste.
Once couscous is finished cooking and cooled add in veggies and dressing.
Toss and refrigerate for 2 hours or more.
