The apples are the true star of this recipe. I like using gala or fuji apples for this. I tried honeycrisp but they did not soften enough and added a little too much sweetness. The cake is slightly sweetened already so you want to use a mild apple. I also prefer the apples to be cut pretty thin. This makes for a prettier cake and adds the perfect texture.
I chose to serve this cake plain with just a light dusting of powdered sugar. To fancy things up a bit you could top with fresh whipped cream (or fresh maple bourbon whipped cream – oh my!) or even a small scoop of ice cream would be tasty.
