Sweet and Spicy Lentil Dal
This Indian dish is one of my favorites. I love how its super spicy from the curry powder and then suddenly you get a burst of sweetness from the pineapple. It is quite devine. I love serving this dal over brown rice to make a hearty meal.
Sweet and Spicy Lentil Dal
{ingredients}
1 C Lentils
1 can diced tomatoes
1 T tomato paste
1T EVOO
1 small yellow onion
1 clove garlic {minced}
½ jalapeño pepper {deseeded, minced}
2.5 C water
½ T curry powder
¼ t redpepper flakes {more or less to your liking}
Salt and Pepper to taste
1 small can crushed pineapple
3 T fresh cilantro {for garnish}
{directions}
- Heat EVOO in pan over medium-high heat.
- Add onion, garlic, pepper and sauté until onion is translucent.
- Season with curry, red pepper flakes, salt and pepper.
- Add lentils, tomatoes, tomato paste and water.
- Reduce heat and let simmer for about 30-45 minutes. Stirring frequently.
- Add crushed pineapple and stir until well combined and the pineapple is heated through.
- Garnish with cilantro. Serve over brown rice.

Actually this is one recipe I’ll try as it looks like it would be a light yet filling dinner….great for guest.
