Bean Veggie Burgers
Over the next few weeks I will be posting several legume recipes. I’m participating in a really cool blogger challenge sponorsed by USA Dry Peas, Lentils & Chickpeas. So along with some bean recipes I will have a beany giveaway for ya all…so get ready.
Nothing says memorial day like a burger…in my case a bean veggie burger! They were the highlight of my day, the light in my eyes, the key to my soul….aka they are down right GOOD!
Bean Burgers
{ingredients}
1 C {bean of your choice, garbanzo would be perfect in texture}
1 C brown rice
3 T flour
1 egg
¼ red onion {chopped}
½ C shredded veggies {I used carrots and zucchini}
½ t salt
¼ t pepper
¼ t chili powder
½ t dried basil
1 T EVOO
{directions}
- Mash beans leaving a few whole.
- Add remaining ingredients. {Brown rice through dried basil}
- Place in refrigerator for at least 30 minutes.
- Shape bean mixture into six burgers.
- In a medium pan heat ½ T EVOO. Place three burgers into the pan until golden brown on all sides.
- Repeat #5 with the remaining three burgers.
- Serve on whole wheat buns or over a crisp salad. These burgers are fantastic on their own as well.
